White Chocolate Pear Cupcakes
Happy Thursday! For today’s recipe,
we’re bringing you a slice of white chocolate & pear heaven! These delicious cupcakes are accented with white chocolate & swirls of seasonal pear purée. To top it off, we frosted them with vanilla pear buttercream!
White Chocolate & Pear Cupcakes
Quantity: 12 cupcakes
Ingredients:
- 125 g / ½ c butter, softened to room temperature
- 110g / ½ c sugar
- 1 egg
- 220g / 1 ½ c flour
- 1/3 TL / 1 tsp baking powder
- 1 TL / 1 tsp baking soda
- Pinch of salt
- 125 ml / ½ c milk
- 1 Tl / 1 tsp white vinegar
- 100 g / 3 ounces white chocolate, finely chopped
- 2 EL / 2 tbsp pureed pear + more for the frosting (from 1-2 pears)
Instructions:
- Preheat the oven to 180°C & fill a standard muffin tray with 12 cupcake cups
- Wash & cut the pears. Using an immersion blender, blend the pears to make the puree. Set a sieve above a bowl. Transfer the pureed pear to the sieve & let the juice drain
- Combine the butter & sugar until fluffy. Add the egg & mix well
- In a separate bowl, sift together all the dry ingredients. In another bowl, mix the vinegar & milk to make buttermilk
- Alternately add the dry & wet mixtures to the butter mixture, mixing thoroughly after each addition
- Gently fold in the drained pear puree & chopped chocolate
- Evenly distribute the batter between the 12 muffin cups. Bake for 12-16 minutes. Pro tip: when the chocolate melts it will bubble up & overflow from the cupcake sometimes. No worries, just let them cool fully & the pieces will reform!
Pear Buttercream Frosting
Ingredients:
- 125 g / ½ c butter, softened to room temperature
- 330 g / 11/2 c powdered sugar
- 2 EL / 2 tbsp pureed pear
- While the cupcakes are baking, whip up your frosting! Pro tip: For nice & fluffy buttercream, whip your butter on high for ~5 minutes first
- Sift the powdered sugar & add it to the butter in two batches. Whipping on high after each sugar addition
- Add the pear puree last
- Let the cupcakes cool completely before frosting & enjoy!
