Vegan Apple Pie Recipe

Time: 35 minutes prep; 40-45 minutes baking

Ingredients (included):

  • Sugar mix
  • Flour mix
  • 5 apples
  • Pie dish
  • Cinnamon Sugar

Ingredients (not included):

  • 185g vegan margarine*, cold
  • 4-6 tbsp cold water
  • Vegan ice cream* for serving (optional)

Tools (not included):

  • Pastry cutter or knife
  • 2 large mixing bowls
  • 1 small bowl
  • Sharp knife
  • Large spoon
  • Rolling pin

*dairy products can also be substituted in for the vegan ingredients

Instructions:

To make the pie dough:

  1. Start by opening the Flour Mix & scooping out 4 tbsp of flour. Put this is a small bowl & set aside for later. You will need it when rolling out the pie crust
  2. Next, pour the remaining Flour Mix into a large bowl & add 185g cold vegan margarine. Using a pastry cutter or knife, cut the margarine into the Flour Mix until the dough is crumbly & there a no large chunks of margarine
  3. Start by adding 3-4 tbsp of cold water & use your hands to mix the water into the dough. The dough should come together in a ball. Continue adding cold water by the tablespoon & mix with your hands until the dough just comes together. Once the dough is in a ball, put it in the fridge to chill while you prepare the apple filling

To make the apple filling:

  1. Wash, core, & thinly slice all the apples. No need to peel them
  2. Place the sliced apples in a large mixing bowl & add the Sugar Mix. Use a large spoon to mix the apples & sugar mix until the apples are coated in the Mix

To assemble & bake the pie:

  1. Preheat the oven to 175°C
  2. Remove the chilled dough from the refrigerator & divide the dough into two. You will be rolling out 2 crusts – 1 for the bottom & 1 to cover the apple filling
  3. Sprinkle some of the set aside flour on a flat surface & using a rolling pin, roll out 1 of the dough balls until it is about 1 cm thick. Pro tip: If the dough becomes sticky, sprinkle more flour on the sticky parts. If the dough cracks or splits, sprinkle a bit of water on it & “glue” it back together
  4. Once the first dough is rolled out, gently line the pie form with it & pour in the apple filling. Repeat step # with the second ball of dough & gently layer the dough over the apple filling. Trim the edges of the pie crusts & use your fingers to pinch the 2 crusts closed.
  5. Sprinkle the cinnamon sugar over the top of the pie crust & use a sharp knife to slice a few slits in the top. Bake for 40-45 minutes until the top is golden brown & the filling is soft & bubbling
  6. Serve warm with a scoop of ice cream!

Storage notes: pie can be covered in plastic wrap & stored at room temperature for up to 2 days after baking.
